Recipe

Nutty Oatmeal Cookies
(Use pure gluten free oats or substitute with Quinoa flakes).

I pkg butter
½ cup sugar
½ cup pure gluten free oats (or 3/4 cup Quinoa flakes)
½ cup toasted hazelnuts, coarsely chopped
½ cup chocolate chips or coarsely chopped chocolate
1 tsp baking powder
½ tsp xanthum gum
¾ cup GF Flour Blend or Brown Rice Flour

Preheat the oven to 350 F. 
*Mix the butter and sugar until light and fluffy. 
*In a large bowl blend the oats, nuts, chocolate chunks
(or chocolate chips) with the baking powder,
xanthum gum and GF flour. 
*Add the dry ingredients to the butter and
sugar mixture   and mix well. 
*Roll the dough into one long roll, about 1 inch thickness, and cut into 18-20 pieces. 
*Roll each piece into a ball and place
on parchment-cookie sheet.  Press down gently with
palm of hand to flatten a bit.
*Bake for about 12-13 minutes. 
*Makes about 18-20 cookies.
